1. Cut the shirataki noodles into easy-to-eat lengths, and slice the beef thinly.
2. In a pot, heat the shirataki without oil and remove any excess water. When the noodles are heated, add the sesame oil and beef and stir fry, breaking up the noodles as you go. Spoon off any scum that forms.
3. Add the wine, cover and continue cooking for 5 minutes. Then add the sugar, soy sauce, and mirin. When the liquid has reduced to about one third, remove from the heat, let stand for about 20 minutes to let the flavors sink in, then serve!
