Soybeans form the heart of the Japanese diet

We Japanese have been eating soy products for generations.

Soy sauce, miso and tofu are all made from this versatile bean, and we also love to use processed soy foods, like abura-age (deep-fried tofu) and natto (fermented soybeans), in our cooking.

Everyone needs to consume a good balance of animal and plant proteins, and soybeans are such an excellent source of the latter that they are popularly known as the “meat of the field”.

• Soybeans contain none of the cholesterol of animal based proteins, making them a great choice for your health.

• They are full of dietary fiber that helps prevent constipation and improve skin condition. (Women are particularly prone to constipation, so soy is a great addition to their diet.)

• Dietary fiber also helps the body to eliminate excess fat, and has been found to help prevent obesity by promoting the removal of excess cholesterol and triglycerides from the body.

• Soybeans contain an important substance called isoflavones. Isoflavones can imitate the function of estrogen, so can help make up for the gradual drop in estrogen levels that is part of the aging process. So go ahead and eat your fill of soy products if you want to stay young!
