Broccoli Rice


The aromatic sesame oil works wonderfully with broccoli’s texture!

Ingredients (serves 6)

3 cups of rice

Half head of broccoli

3 cups of dashi stock + cooking water

2 tbsp sesame oil

2 tbsp sake

1 tsp sugar

1 tbsp soy sauce

A little salt

Black sesame to taste

Method

1. Wash the rice and drain in a colander.

2. Boil the broccoli upside down in salted water for 4 or 5 minutes (save the cooking water), then break up into small pieces.

3. Stir fry the rice in the sesame oil. Add the sake, sugar, soy sauce and salt to the broccoli cooking water and combine with enough dashi to make 3 cups. Use this liquid to cook the rice.

4. Combine the cooked rice with the broccoli. Arrange on a dish and garnish with black sesame.
